Future Investments and Veggie Mix Dinner

Last night, instead of going for a run on full stomachs, Jason and I decided to go on a brisk walk. All was well until we turned the first corner and lightning hit pretty close to our neighborhood. We jogged back to the house quick as bunnies! Problems like this have been happening quite often lately… Either there’s a heat advisory preventing us from running, torrential downpour of rain, lightning storm, etc.

Because of so many running delays lately, I’ve been thinking more and more about investing in a treadmill. I haven’t gotten one yet because I know a decent one will cost a pretty penny. It’s just another item to put on my list of  ‘big purchases’ I want to make in the future.  I’m calling them ‘investments’ to take away the sting from the huge cost that accompanies them:

  • Treadmill
  • Breville Juicer – either the “Crush” or “Elite” model
  • Weight Set
  • Vitamix Blender

It’s a small list, but one that carries a hefty price tag. I’m a huge penny pincher and hate paying full price, so maybe I’ll get lucky and find a good deal somewhere. I’ll keep you updated if I decide to take the plunge on anything.

While were on the topic of penny pinching, Jason and I found bedding for our guest room this weekend. I stumbled on a Kate Spade bedding set in the clearance section of “Bed Bath and Beyond” and couldn’t resist. The room has been a work in progress for a while now, but since getting the room painted everything is falling into place. I’ll show you the finished room once everything is complete (we still haven’t found a bed yet).

Now onto the food

For dinner tonight, I decided on a quick and easy veggie mix. I couldn’t think of a cooler name, but it was delicious. I used squash, zucchini, mushroom, tomato, and spinach. I also tossed in about 1 tablespoon of butter and a dash of salt. I started by cooking the squash, zucchini, and mushroom with the butter and salt. After the squash started to get tender I threw in the tomato. I made sure to squeeze out most the juice and seeds from the tomato to help cut down on the liquid going into the pan.Bedding-0883

After everything was almost finished cooking I tossed in the spinach and kept stirring until it cooked down.Bedding-0887
